Ingredients
Scale
- 1 large head of broccoli, cut into florets
- 2 medium sweet potatoes, peeled and cubed (about 1 inch)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a large bowl, toss the broccoli florets and sweet potato cubes with olive oil, garlic powder, onion powder, red pepper flakes (if using), salt, and pepper. Ensure the vegetables are evenly coated.
- Step 3: Spread the seasoned vegetables in a single layer on a large baking sheet. Avoid overcrowding.
- Step 4: Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the vegetables are tender and slightly caramelized.
- Step 5: Remove from oven and serve immediately.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat in a skillet over medium heat until warmed through and slightly crispy again.
- This makes a vibrant side dish alongside grilled chicken or fish, or try it tossed with quinoa for a simple vegetarian meal.
- Don't overcrowd the pan; use two baking sheets if necessary to ensure even browning and delicious caramelization.
