  • 1/4 cup shelled, unsalted pistachios, chopped (for coating)

Instructions

  1. Step 1: In a medium, non-stick saucepan, combine the sweetened condensed milk, butter, heavy cream, ground pistachios, pistachio extract, and salt.
  2. Step 2: Cook over medium-low heat, stirring constantly with a spatula or wooden spoon. It’s important to stir continuously to prevent sticking and burning.
  3. Step 3: Continue cooking and stirring until the mixture thickens and starts to pull away from the sides of the pan, forming a soft mass. This usually takes about 10-15 minutes. The brigadeiro is ready when you can drag your spatula through the center of the pan and the bottom is visible for a few seconds before the mixture slowly comes back together.
  4. Step 4: Transfer the brigadeiro mixture to a buttered plate or bowl. Let it cool completely in the refrigerator for at least 2 hours, or preferably overnight, until firm enough to handle.
  5. Step 5: Grease your hands with butter. Take a small amount of the cooled brigadeiro mixture (about 1 tablespoon) and roll it into a ball.
  6. Step 6: Roll the brigadeiro balls in the chopped pistachios, coating them evenly. Place the coated brigadeiros in mini paper cups or serve on a platter. Store in an airtight container in the refrigerator.
