Ingredients
Scale
- 1 can (14 ounces) sweetened condensed milk
- 1 tablespoon unsalted butter
- 1/4 cup heavy cream
- 1/4 cup shelled, unsalted pistachios, finely ground
- 1/4 teaspoon pistachio extract
- Pinch of salt
- 1/4 cup shelled, unsalted pistachios, chopped (for coating)
- Butter, for greasing hands
Instructions
- Step 1: In a medium, non-stick saucepan, combine the sweetened condensed milk, butter, heavy cream, ground pistachios, pistachio extract, and salt.
- Step 2: Cook over medium-low heat, stirring constantly with a spatula or wooden spoon. It’s important to stir continuously to prevent sticking and burning.
- Step 3: Continue cooking and stirring until the mixture thickens and starts to pull away from the sides of the pan, forming a soft mass. This usually takes about 10-15 minutes. The brigadeiro is ready when you can drag your spatula through the center of the pan and the bottom is visible for a few seconds before the mixture slowly comes back together.
- Step 4: Transfer the brigadeiro mixture to a buttered plate or bowl. Let it cool completely in the refrigerator for at least 2 hours, or preferably overnight, until firm enough to handle.
- Step 5: Grease your hands with butter. Take a small amount of the cooled brigadeiro mixture (about 1 tablespoon) and roll it into a ball.
- Step 6: Roll the brigadeiro balls in the chopped pistachios, coating them evenly. Place the coated brigadeiros in mini paper cups or serve on a platter. Store in an airtight container in the refrigerator.
Notes
- Store leftover pistachio brigadeiros in the refrigerator for up to 5 days in an airtight container.
- If your brigadeiros become too firm after refrigeration, let them sit at room temperature for a few minutes to soften slightly before serving.
- Serve these decadent treats with a strong cup of coffee or alongside other small desserts for a delightful pistachio-themed spread.
- For a smoother texture, pulse the pistachios in a food processor until they're an almost flour-like consistency before adding them to the pan.
