- 2 large sweet potatoes, peeled and cubed
- 1 red bell pepper, chopped
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped

- 2 tablespoons olive oil
- 1 tablespoon chopped fresh oregano
- 1 lemon, juiced
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss the cubed sweet potatoes and chopped red bell pepper with olive oil, oregano, salt and pepper on a baking sheet.
- Step 2: Roast for 20-25 minutes, or until the sweet potatoes are tender and slightly caramelized, flipping halfway through.
- Step 3: Remove the baking sheet from the oven and add the Kalamata olives and sun-dried tomatoes. Toss to combine.
- Step 4: Return to the oven and bake for another 5 minutes to warm the olives and tomatoes.
- Step 5: Remove from the oven and drizzle with lemon juice.
- Step 6: Sprinkle with crumbled feta cheese before serving.
