- 8 large flour tortillas (burrito size)
- 1 pound cooked shrimp, chopped, or imitation crab meat
- 8 ounces cream cheese, softened
- 1 cup shredded Monterey Jack and Cheddar cheese blend
- 4 tablespoons unsalted butter, melted
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon garlic powder
- 1/4 cup chopped green onions (scallions)
Instructions
- Step 1: In a large mixing bowl, combine the softened cream cheese, shredded cheese blend, Old Bay seasoning, garlic powder, and chopped green onions. Fold in the chopped seafood (shrimp or crab) until the mixture is evenly incorporated and creamy.
- Step 2: Preheat oven to 400°F (200°C). Lay one tortilla flat and place approximately 1/3 cup of the seafood mixture directly in the center.
- Step 3: To form the "bomb," tightly fold the edges of the tortilla inward over the filling, creating a sealed, round pouch or satchel. Pinch the seams tightly to ensure the filling is completely contained.
- Step 4: Arrange the sealed tortilla bombs seam-side down on a baking sheet lined with parchment paper. Brush the tops and sides of the assembled bombs generously with the 4 tablespoons of melted butter.
- Step 5: Bake for 15 to 18 minutes, or until the tortillas are golden brown and crispy and the internal cheese filling is hot and bubbly.
- Step 6: Allow the Cheesy Seafood Tortilla Bombs to cool on the baking sheet for 5 minutes before serving, as the filling will be extremely hot. Serve warm with sour cream or salsa, if desired.
Notes
- Store cooled leftovers tightly wrapped in the refrigerator for up to three days; they also freeze excellently prior to baking for a future quick meal.
- For maximum crispiness, avoid the microwave and reheat chilled bombs in a 350°F oven or air fryer for about 8 to 10 minutes until piping hot.
- Create an ultimate dipping experience by mixing sour cream with a dash of lime juice and a pinch of extra Old Bay to complement the filling’s spice.
