- Medjool Dates: 12, pitted
- Peanut Butter: 1/4 cup
- Dark Chocolate Chips: 1/2 cup
- Flaky Sea Salt: To sprinkle
- Peanuts, chopped: 1/4 cup

Instructions
- Step 1: Slice each date lengthwise, being careful not to cut all the way through. Create a pocket in the date.
- Step 2: Fill each date with approximately 1 teaspoon of peanut butter. Sprinkle chopped peanuts on top of the peanut butter in each date.
- Step 3: Melt the dark chocolate chips. You can do this in a microwave-safe bowl in 30-second intervals, stirring in between, or in a double boiler. Stir in coconut oil, if using, for a smoother consistency.
- Step 4: Dip each peanut butter-filled date into the melted chocolate, ensuring it's fully coated. Alternatively, you can drizzle the melted chocolate over the dates.
- Step 5: Place the chocolate-covered dates on a parchment paper-lined plate or tray. Sprinkle with flaky sea salt.
- Step 6: Refrigerate for at least 30 minutes, or until the chocolate has set completely. Enjoy!
