Ingredients

  • Shrimp (peeled and deveined) 1 pound
  • Broccoli florets 1 cup
  • Bell pepper (sliced) 1 cup
  • Soy sauce 3 tablespoons
  • Sesame oil 1 tablespoon
  • Garlic (minced) 2 cloves
  • Ginger (grated) 1 teaspoon
  • Cornstarch 1 teaspoon

Instructions

  1. Step 1: In a small bowl, whisk together soy sauce, sesame oil, minced garlic, grated ginger, and cornstarch. Set aside.
  2. Step 2: Heat a large skillet or wok over medium-high heat.
  3. Step 3: Add shrimp to the hot skillet and cook for about 2-3 minutes, until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Step 4: Add broccoli florets and sliced bell pepper to the skillet. Stir-fry for 3-4 minutes, until vegetables are tender-crisp.
  5. Step 5: Return the cooked shrimp to the skillet with the vegetables. Pour the soy sauce mixture over the shrimp and vegetables and stir-fry for another 1-2 minutes, until the sauce has thickened slightly and everything is well combined.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
