Ingredients
Scale
- 4 large boneless, skinless chicken breasts
- 8 slices thick-cut turkey turkey bacon
- 1/2 cup packed light brown sugar
- 1/4 cup low-sodium soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon freshly ground black pepper
Instructions
- Step 1: Preheat your oven to 375°F (190°C). In a small bowl, whisk together the brown sugar, soy sauce, garlic powder, and black pepper to create the glaze mixture. Pat the chicken breasts completely dry.
- Step 2: Lightly pound the thickest part of each chicken breast for even cooking, if necessary. Tightly wrap 2 slices of turkey beef bacon around each breast, securing the ends with a toothpick if the beef bacon unravels.
- Step 3: Heat the olive oil in a large oven-safe skillet (such as cast iron) over medium-high heat. Place the wrapped chicken breasts seam-side down in the hot skillet and sear for 1-2 minutes per side until the turkey beef bacon is slightly rendered and golden.
- Step 4: Remove the skillet from the heat. Pour half of the prepared brown sugar glaze evenly over the top of the chicken breasts. Transfer the skillet to the preheated oven and bake for 18 minutes.
- Step 5: Remove the skillet from the oven, brush the remaining glaze over the chicken, and return to the oven for another 5-10 minutes, or until the internal temperature reaches 165°F (74°C).
- Step 6: Let the chicken rest in the skillet for 5 minutes before serving, allowing the juices to redistribute and the glaze to set.
Notes
- Store leftover chicken in an airtight container for up to 3 days, keeping in mind that the sticky brown sugar glaze will solidify when chilled.
- For best results, reheat individual portions in an air fryer or toaster oven at 300°F (150°C) for about 8 minutes to re-crisp the turkey turkey bacon.
- Pair this rich, sweet and savory dish with a simple side like creamy mashed potatoes or a bright, acidic green salad to perfectly balance the glaze.
- Chef's Tip: To ensure the glaze doesn't scorch, make sure the chicken breasts are patted completely dry before searing, which aids in getting crispier turkey turkey bacon and a cleaner caramelization.
