Ingredients
Scale
- All-purpose flour 1 cup
- Unsweetened cocoa powder ½ cup
- Granulated sugar 1 cup
- Brown sugar ½ cup packed
- Eggs 2 large
- Vegetable oil ½ cup
- Brewed espresso, cooled ¼ cup
- Mascarpone cheese 8 ounces
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- Step 2: In a large bowl, whisk together flour, cocoa powder, granulated sugar, and brown sugar.
- Step 3: In a separate bowl, whisk together eggs, oil, and cooled espresso. Pour the wet ingredients into the dry ingredients and mix until just combined.
- Step 4: Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Step 5: Let the brownies cool completely in the pan. Spread mascarpone cheese evenly over the cooled brownies. Dust with cocoa powder before serving (optional).
Notes
- For extra fudginess, don't overbake the brownies; moist crumbs on the toothpick are key.
- Store leftover brownies in an airtight container in the refrigerator to keep the mascarpone fresh.
- A light dusting of cocoa powder just before slicing adds a touch of elegant tiramisu flavor.
- Serve chilled brownies with a dollop of whipped cream or a scoop of vanilla ice cream for a delightful dessert.
