  • 1.5 lbs Beef Sirloin, cut into 1-inch cubes
  • 1.5 lbs Yukon Gold Potatoes, cut into 1-inch cubes
  • 1/4 cup Honey
  • 2 tbsp Soy Sauce
  • 1 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 1 tsp Dried Thyme
  • Salt and Pepper to taste

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Toss potatoes with 1 tablespoon of olive oil, salt, pepper, and dried thyme on a baking sheet. Roast for 20 minutes.
  2. Step 2: While potatoes are roasting, prepare the honey beef. In a bowl, whisk together honey, soy sauce, and minced garlic.
  3. Step 3: Add the beef cubes to the honey mixture and toss to coat evenly.
  4. Step 4: After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven and arrange the marinated beef cubes evenly amongst the potatoes.
  5. Step 5: Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the beef is cooked through and the potatoes are tender. Ensure the internal temperature of the beef reaches 145°F (63°C) for medium-rare.
  6. Step 6: Let the dish rest for a few minutes before serving. Garnish with fresh thyme (optional).
