  • 1 teaspoon vanilla bean paste
  • 1 teaspoon baking soda and 1/2 teaspoon salt

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×5 inch loaf pan, or line it with parchment paper for easy removal.
  2. Step 2: In a large bowl, whisk together the melted butter and brown sugar until smooth. Beat in the eggs one at a time, then stir in the buttermilk and vanilla powder until fully combined.
  3. Step 3: In a separate medium bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined and a few streaks of flour remain (do not overmix).
  4. Step 4: Gently fold in the 1 cup of chopped pecans. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the reserved 1/4 cup of pecans over the top of the batter.
  5. Step 5: Bake for 50 to 60 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean. If the top browns too quickly, loosely tent the loaf with foil during the last 15 minutes of baking.
  6. Step 6: Let the Pecanbread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.
