Instructions
- Step 1: Preheat oven to 325°F (160°C). In a medium bowl, combine sugar cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to create the crust.
- Step 2: In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Step 3: Mix in vanilla extract, then beat in eggs one at a time until just combined. Stir in sour cream until smooth.
- Step 4: Pour the cream cheese mixture over the sugar cookie crust.
- Step 5: Bake for 55-65 minutes, or until the edges are set and the center is just slightly jiggly.
- Step 6: Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. This helps prevent cracking. Remove from oven, cover, and refrigerate for at least 4 hours, or preferably overnight, before serving. Garnish with sugar cookies, if desired.

- While not recommended, a small slice can be gently warmed in the microwave for a few seconds for a softer texture, but avoid overheating.
