- 1 package (14.1 ounces) refrigerated sugar cookie dough
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 pint fresh strawberries, hulled and sliced
- 1/4 cup strawberry preserves or jam
- 1/4 cup chopped fresh mint (optional)
Instructions
- Step 1: Prepare the cookie crusts. Preheat oven to 350°F (175°C). Roll out the sugar cookie dough and cut out 6-8 (approximately 4 inch diameter) circles. Bake for 8-10 minutes, or until lightly golden. Let cool completely on a wire rack.
- Step 2: Make the cream cheese filling. In a medium bowl, beat together the softened cream cheese and powdered sugar until smooth. Stir in the vanilla extract.
- Step 3: Whip the cream. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Step 4: Assemble the lasagna. In a 9×13 inch baking dish, layer one cookie crust. Spread half of the strawberry preserves over the crust. Top with half of the sliced strawberries, and half of the cream cheese mixture. Repeat layers: cookie crust, strawberry preserves, strawberries, and cream cheese mixture. Top with the final cookie crust.
- Step 5: Refrigerate and Garnish. Refrigerate the lasagna for at least 2 hours to allow the flavors to meld and the cream cheese filling to set. Before serving, garnish with fresh mint (optional). Slice and serve chilled.
Notes
- Store leftover lasagna, covered, in the refrigerator for up to 3 days.
- For easiest slicing, let the lasagna sit at room temperature for 15-20 minutes before serving, then reheat individual slices briefly in the microwave if desired.
- Serve this delightful dessert with a scoop of vanilla ice cream or a dollop of whipped cream for an extra decadent treat.
- To prevent the cookies from browning too quickly, line your baking sheet with parchment paper and watch them carefully during the last few minutes of baking.
