Ingredients
Scale
- 1 ripe pineapple, peeled, cored, and finely chopped
- 2 jalapeños, seeded and minced (adjust to your spice preference)
- 1/2 cup red onion, finely chopped
- 1/2 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/4 cup chopped cilantro
- 1 tablespoon grated ginger
- 1 teaspoon ground cumin
Instructions
- Step 1: Combine the chopped pineapple, jalapeños, red onion, brown sugar, apple cider vinegar, cilantro, and ginger in a medium-sized saucepan.
- Step 2: Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer for 20-25 minutes, or until the pineapple is tender and the chutney has thickened slightly. Stir occasionally to prevent sticking.
- Step 3: Stir in the ground cumin during the last 5 minutes of simmering.
- Step 4: Remove the saucepan from the heat and let the chutney cool completely. This allows the flavors to meld.
- Step 5: Taste and adjust seasoning as needed. You may want to add more brown sugar for sweetness, jalapeño for heat, or vinegar for tanginess.
- Step 6: Transfer the chutney to a sterilized jar or container and store in the refrigerator for up to 2 weeks. The flavors will deepen over time.
Notes
- Store your Spicy Pineapple Jalapeño Chutney in an airtight container in the refrigerator for up to two weeks, allowing the flavors to deepen and mature.
- For a warm and comforting twist, gently reheat a portion of the chutney before serving, enhancing its aromatic spices.
- Elevate your grilled chicken, fish tacos, or even a simple cheese board with a dollop of this vibrant and zesty chutney for an explosion of flavor.
- To prevent scorching while simmering, ensure the heat is low and stir frequently; patience yields a smoother, more flavorful chutney.
