Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line it with paper liners. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
  2. Step 2: In a separate bowl, whisk together the buttermilk, melted butter, egg, and honey until well combined. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
