Ingredients
Scale
- 1 pound fresh strawberries, hulled and sliced
- 1 cup (2 sticks) unsalted butter, cut into cubes
- 1 cup granulated sugar
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup strawberry jam (optional, for extra strawberry flavor)
- 2 tablespoons lemon juice (optional, for brightness)
Instructions
- Step 1: Combine all ingredients in a slow cooker. Stir well to ensure the butter is evenly distributed amongst the strawberries and sugar.
- Step 2: Cook on low for 4-6 hours, or until the strawberries have softened and released their juices, and the butter is completely melted and incorporated. Stir gently every hour or two to prevent sticking and ensure even cooking.
- Step 3: Remove the slow cooker lid during the last 30 minutes of cooking to allow excess moisture to evaporate, resulting in a thicker strawberry butter.
- Step 4: Once cooked, carefully transfer the strawberry butter to a heatproof bowl. Use an immersion blender (or carefully transfer to a regular blender) to puree the mixture until smooth. If you prefer a slightly chunky texture, you can skip this step or pulse only a few times.
- Step 5: Allow the strawberry butter to cool completely. Once cooled, transfer to an airtight container and refrigerate for at least 2 hours to allow it to firm up.
- Step 6: Serve on biscuits, toast, scones, or use as a spread for pancakes or waffles. Store refrigerated for up to 2 weeks.
