  • 1 tsp Cajun seasoning

Instructions

  1. Step 1: Heat olive oil in a large skillet over medium-high heat. Add onion and bell pepper and cook until softened, about 5 minutes.
  2. Step 2: Stir in rice and Cajun seasoning; cook for 1 minute, stirring constantly.
  3. Step 3: Add diced tomatoes (undrained) and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is almost cooked through.
  4. Step 4: Stir in shrimp and garlic powder. Cover and cook for another 3-5 minutes, or until shrimp is pink and cooked through and rice is tender.
