- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 cup long-grain rice
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/4 cup chopped green onions, for garnish
Instructions
- Step 1: Heat olive oil in a large skillet over medium-high heat. Add onion and bell pepper and cook until softened, about 5 minutes.
- Step 2: Stir in rice and Cajun seasoning; cook for 1 minute, stirring constantly.
- Step 3: Add diced tomatoes (undrained) and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is almost cooked through.
- Step 4: Stir in shrimp and garlic powder. Cover and cook for another 3-5 minutes, or until shrimp is pink and cooked through and rice is tender.
- Step 5: Garnish with chopped green onions and serve immediately.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- For reheating, add a splash of chicken broth to prevent dryness and microwave for 1-2 minutes, or until heated through.
