- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- 1/4 cup chopped green onions, for garnish
Instructions
- Step 1: Heat olive oil in a large skillet over medium-high heat. Add onion and bell peppers; cook until softened, about 5-7 minutes. Stir in garlic and cook for 1 minute more, until fragrant.
- Step 2: Add rice and Cajun seasoning to the skillet; stir to coat. Cook for 1 minute, stirring constantly.
- Step 3: Stir in diced tomatoes (undrained) and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is tender and liquid is absorbed.
- Step 4: Add shrimp to the skillet. Stir to combine and cook for 3-5 minutes, or until shrimp is pink and cooked through. Stir in smoked paprika.
- Step 5: Remove from heat and let stand, covered, for 5 minutes.
- Step 6: Garnish with chopped green onions and serve hot.
