Ingredients
- All-purpose flour: 3 cups
- Granulated sugar: 1 cup
- Unsalted butter: 1/2 cup (1 stick), softened
- Honey: 1/2 cup
- Eggs: 2 large
- Baking soda: 1 teaspoon
- Sour cream: 1 1/2 cups
- Sweetened condensed milk: 1 can (14 ounces)
Instructions
- Step 1: In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the honey.
- Step 2: In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be sticky.
- Step 3: Divide the dough into 8 equal portions. On a lightly floured surface, roll each portion into a thin circle (about 9 inches in diameter). Bake each circle on a parchment-lined baking sheet at 350°F (175°C) for 5-7 minutes, or until lightly golden brown. Let cool completely.
- Step 4: While the cake layers are cooling, prepare the frosting: In a medium bowl, combine the sour cream and sweetened condensed milk. Mix well.
- Step 5: To assemble the cake, place one cake layer on a serving plate. Spread a generous amount of frosting over the layer. Repeat with the remaining layers, stacking them on top of each other.
- Step 6: Crumble the edges of the cake layers (or one extra baked layer) to create crumbs. Sprinkle the crumbs all over the top and sides of the cake. Refrigerate for at least 6 hours, or preferably overnight, to allow the cake to soften and the flavors to meld.
Notes
- Store the assembled cake, well covered, in the refrigerator for up to 3 days for optimal flavor and texture.
- If desired, gently warm individual slices in the microwave for a few seconds to enhance the honey aroma and soften the layers slightly.
- Serve chilled or at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream for an extra touch of indulgence.
- For easier rolling, chill the individual dough portions for 15-20 minutes before rolling them out; this will reduce stickiness and prevent tearing.
