Ingredients
- All-purpose flour: 1 cup
- Baking powder: 1 teaspoon
- Salt: 1/4 teaspoon
- Pumpkin puree: 1/2 cup
- Granulated sugar: 1 cup
- Vegetable oil: 1/4 cup
- Eggs: 2 large
- Pumpkin pie spice: 1 teaspoon
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour a Twinkie pan or muffin tin.
- Step 2: In a medium bowl, whisk together flour, baking powder, salt, and pumpkin pie spice.
- Step 3: In a separate large bowl, beat together pumpkin puree, sugar, vegetable oil, and eggs until well combined.
- Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Step 5: Fill each Twinkie mold or muffin cup about 2/3 full.
- Step 6: Bake for 15-20 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely. Optionally, inject with a cream filling of your choice.
Notes
- Store these pumpkin spice Twinkies in an airtight container at room temperature for up to 3 days to maintain their soft texture.
- A quick zap in the microwave for 5-10 seconds can revive a slightly stale Twinkie, making it warm and extra delicious.
- Serve these festive treats with a dollop of whipped cream and a sprinkle of extra pumpkin pie spice for an extra touch of fall flavor.
- To avoid tough Twinkies, gently fold the dry ingredients into the wet – overmixing develops gluten, which leads to a less tender cake.
