Ingredients
- Unsalted butter (softened): 1 cup (2 sticks)
- All-purpose flour: 2 cups
- Finely chopped pistachios: 1 cup
- Powdered sugar (confectioners' sugar): 1/2 cup (for the dough)
- Vanilla extract: 1 teaspoon
- Fine salt: 1/2 teaspoon
- Extra powdered sugar: 1 cup (for dusting)
Instructions
- Step 1: Preheat the oven to 350°F (175°C). In a large bowl or stand mixer, cream together the softened butter, 1/2 cup of powdered sugar, and vanilla extract until the mixture is light and fluffy.
- Step 2: In a separate medium bowl, whisk together the flour and salt. Gradually add the dry mixture to the butter mixture, mixing on low speed until just combined. Fold in the finely chopped pistachios until evenly distributed throughout the dough.
- Step 3: Roll the dough into small, 1-inch balls and place them 2 inches apart on an ungreased baking sheet.
- Step 4: Bake for 12 to 15 minutes, or until the cookies are set and the edges are very lightly golden, ensuring the cookies remain pale in color. Allow the cookies to cool on the baking sheet for 5 minutes.
- Step 5: Place the remaining 1 cup of powdered sugar in a shallow dish. While the cookies are still warm, gently roll them in the powdered sugar until fully coated. Allow the cookies to cool completely, then roll them in the powdered sugar a second time for a thick, snowy finish.
Notes
- Store cooled cookies in an airtight container at room temperature for up to one week; layer them between sheets of parchment paper to protect the delicate, snowy powdered sugar coating.
- For a sophisticated presentation, serve these buttery bites alongside a small cup of espresso or a glass of chilled dessert wine, as the richness pairs beautifully with strong coffee or acidic beverages.
- To ensure the pistachio flavor truly shines, lightly toast the chopped nuts in a dry skillet for 5 minutes before allowing them to cool completely and folding them into the dough.
- If the powdered sugar coating becomes slightly damp after storage, refresh the cookies by warming them briefly (2 minutes at 250°F) before adding a final, light dusting of fresh sugar.
