- 1 (14 ounce) can sweetened condensed milk
- 1 tablespoon unsalted butter
- 3 tablespoons pistachio paste
- 1/4 cup heavy cream
- Pinch of salt
- 1/2 cup shelled pistachios, finely chopped for rolling
Instructions
- Step 1: In a medium, non-stick saucepan, combine the sweetened condensed milk, butter, pistachio paste, heavy cream, and salt.
- Step 2: Cook over medium-low heat, stirring constantly with a silicone spatula. Be sure to scrape the bottom and sides of the pan to prevent sticking or burning.
- Step 3: Continue cooking and stirring for approximately 10-15 minutes, or until the mixture thickens and pulls away from the sides of the pan, forming a soft ball that slowly falls from the spatula.
- Step 4: Remove the saucepan from the heat and transfer the brigadeiro mixture to a lightly buttered plate or bowl. Let it cool completely to room temperature, then refrigerate for at least 2 hours, or until firm enough to handle.
- Step 5: Once chilled, grease your hands lightly with butter or coconut oil. Roll small portions of the brigadeiro mixture into approximately 1-inch balls.
- Step 6: Roll each ball in the finely chopped pistachios, ensuring they are evenly coated. Place the finished pistachio brigadeiros in mini paper cups or arrange on a serving platter. Keep refrigerated until ready to serve.
Notes
- Store leftover brigadeiros in an airtight container in the refrigerator for up to 3 days.
- If your brigadeiros get too firm after chilling, let them sit at room temperature for a few minutes to soften slightly before serving.
- For an elegant presentation, serve these pistachio brigadeiros alongside a cup of strong coffee or a sweet dessert wine.
- To intensify the pistachio flavor, lightly toast the chopped pistachios before rolling the brigadeiros in them.
