Instructions

  1. Step 1: In a medium, non-stick saucepan, combine the sweetened condensed milk, butter, pistachio paste, heavy cream, and salt.
  2. Step 2: Cook over medium-low heat, stirring constantly with a silicone spatula. Be sure to scrape the bottom and sides of the pan to prevent sticking or burning.
  3. Step 3: Continue cooking and stirring for approximately 10-15 minutes, or until the mixture thickens and pulls away from the sides of the pan, forming a soft ball that slowly falls from the spatula.
  4. Step 4: Remove the saucepan from the heat and transfer the brigadeiro mixture to a lightly buttered plate or bowl. Let it cool completely to room temperature, then refrigerate for at least 2 hours, or until firm enough to handle.
  5. Step 5: Once chilled, grease your hands lightly with butter or coconut oil. Roll small portions of the brigadeiro mixture into approximately 1-inch balls.
