Ingredients
Scale
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 cup shelled pistachios, roughly chopped
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- Step 2: In a medium bowl, whisk together the melted butter and brown sugar until well combined.
- Step 3: Beat in the egg and then stir in the vanilla and almond extracts.
- Step 4: In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Step 5: Fold in the chopped pistachios.
- Step 6: Pour the batter into the prepared baking pan and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Let cool completely before cutting into squares.
Notes
- Store cooled blondies in an airtight container at room temperature for up to 3 days to maintain their chewy texture.
- For a warm, gooey treat, microwave a blondie square for about 10-15 seconds.
- Serve these delightful blondies with a scoop of vanilla ice cream and a sprinkle of extra pistachios for a truly decadent dessert.
- Don't overmix the batter after adding the flour; this keeps the blondies tender and prevents them from becoming tough.
