- All-purpose flour: 2 cups
- Baking soda: 1 teaspoon
- Salt: 1/2 teaspoon
- Ripe bananas, mashed: 3 medium
- Granulated sugar: 3/4 cup
- Eggs: 2 large
- Vegetable oil: 1/2 cup
- Chocolate chips: 1 cup
Instructions
- Step 1: Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- Step 2: In a large bowl, whisk together the flour, baking soda, and salt.
- Step 3: In a separate bowl, mash the bananas. Add the sugar, eggs, and vegetable oil to the mashed bananas and mix well.
- Step 4: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Step 5: Fold in the chocolate chips.
- Step 6: Fill each muffin cup about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
