Ingredients

  • Goat meat, cut into 1-inch cubes: 2 lbs
  • Red bell pepper, chopped: 1 large

  • Onion, chopped: 1 large
  • Garlic, minced: 4 cloves
  • Ginger, minced: 1 tbsp
  • Black peppercorns, coarsely ground: 2 tbsp
  • Vegetable oil: 3 tbsp
  • Beef or goat broth: 1 cup
  • Dried thyme: 1 tsp
  • Curry Powder: 1 tsp
  • Salt: to taste

Instructions

  1. Step 1: Marinate the goat meat. In a large bowl, combine the goat meat, ground black pepper, minced garlic, minced ginger, and a pinch of salt. Mix well and let it marinate for at least 30 minutes.
  2. Step 2: Sear the goat meat. Heat vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the marinated goat meat in batches, being careful not to overcrowd the pot. Sear each side until browned, about 3-4 minutes per side. Remove the seared meat and set aside.
  3. Step 3: Sauté the vegetables. In the same pot, add the chopped onion, red bell pepper, yellow bell pepper, and scotch bonnet pepper (if using). Sauté until softened, about 5-7 minutes.
  4. Step 4: Combine and simmer. Return the seared goat meat to the pot with the vegetables. Add the beef or goat broth, dried thyme, and curry powder. Stir well to combine. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5-2 hours, or until the goat meat is tender.
  5. Step 5: Adjust seasoning and serve. Taste and adjust seasoning with salt as needed. Simmer uncovered for the last 15 minutes to allow the sauce to thicken slightly. Serve hot with rice, plantains, or your favorite side dish.
