Ingredients
Scale
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup creamy peanut butter
- ½ cup grape jelly (or your preferred jelly)
- 1 ripe banana, mashed
- 1 large egg
- ½ cup milk
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
- Step 2: In a separate bowl, combine the peanut butter, jelly, mashed banana, egg, and milk. Mix well until thoroughly combined.
- Step 3: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix. The batter will be thick.
- Step 4: Pour the batter into the prepared loaf pan and spread evenly.
- Step 5: Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Step 6: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Store leftover bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
- For a warm, gooey treat, reheat slices briefly in the microwave or toaster oven.
- Serve this bread alongside a dollop of Greek yogurt or a scoop of vanilla ice cream for a delightful contrast in textures and flavors.
- To prevent the bread from being too dense, don't overmix the batter; a few lumps are perfectly okay.
