Delicious peanut butter & jelly banana bread recipe recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/2 cup peanut butter
  • 1/4 cup jelly (grape or your preference)

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Step 2: In a medium bowl, whisk together the flour, baking soda, and salt.
  3. Step 3: In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas, peanut butter, and jelly.
  4. Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Step 5: Pour the batter into the prepared loaf pan and spread evenly.
  6. Step 6: Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Store cooled bread tightly wrapped at room temperature for up to 3 days or in the refrigerator for up to a week.
  • For a warm, gooey treat, microwave a slice for 15-20 seconds before serving.
  • Enjoy a slice with a smear of extra peanut butter and a sprinkle of chopped peanuts for added flavor and crunch.
  • Chef's tip: Gently swirl some extra peanut butter and jelly on top of the batter before baking for a beautiful marbled effect.
