Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Combine graham cracker crumbs, ¼ cup sugar, and melted butter in a medium bowl. Press mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let cool completely.
  2. Step 2: In a large bowl, beat cream cheese and 1 cup sugar until smooth and creamy. Beat in peanut butter, eggs, and vanilla extract until well combined. Do not overmix.
  3. Step 3: Pour the peanut butter cheesecake batter over the cooled graham cracker crust.
  4. Step 4: Place the springform pan in a larger baking pan. Pour enough hot water into the larger pan to come halfway up the sides of the springform pan (this creates a water bath for even baking).
  5. Step 5: Bake for 50-60 minutes, or until the cheesecake is set around the edges but still slightly jiggly in the center. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour.
  6. Step 6: Remove the cheesecake from the oven and water bath. Let it cool completely on a wire rack before refrigerating for at least 4 hours, or preferably overnight. Before serving, optionally top with whipped cream.
