Ingredients
- Rolled Oats: 1/2 cup
- Milk (dairy or non-dairy): 1 cup
- Greek Yogurt: 1/4 cup
- Chia Seeds: 1 tablespoon
- Maple Syrup: 1-2 tablespoons (to taste)
- Vanilla Extract: 1/2 teaspoon
- Peach, diced: 1/2 cup
- Cinnamon: 1/4 teaspoon
Instructions
- Step 1: In a jar or container with a lid, combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, and cinnamon.
- Step 2: Stir well to ensure all ingredients are evenly distributed.
- Step 3: Gently fold in the diced peaches. Reserve a few peach slices for topping if desired.
- Step 4: Seal the jar or container tightly and refrigerate overnight, or for at least 4 hours.
- Step 5: In the morning, give the overnight oats a good stir. If the mixture seems too thick, add a splash of milk to reach your desired consistency.
- Step 6: Top with the reserved peach slices (if any) and enjoy your sweet morning treat cold.
Notes
- Overnight oats are best stored in an airtight container in the fridge for up to 3 days.
- For a warmer cobbler experience, microwave in 30-second intervals, stirring in between, until heated through.
- Try topping with a sprinkle of granola or a dollop of whipped cream for added texture and richness.
- For a more intense peach flavor, macerate the diced peaches with a teaspoon of maple syrup for 15 minutes before adding them to the oats.
