  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (24 ounce) jar of your favorite pasta sauce
  • 1 (15 ounce) container ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 6 lasagna noodles (oven-ready preferred)
  • 6 slices turkey bacon, cooked and crumbled
  • 8 slices cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). Brown the ground turkey in a large skillet over medium-high heat with olive oil. Drain off any excess grease. Add the chopped onion and minced garlic and cook until softened, about 5 minutes. Season with salt and pepper. Stir in the pasta sauce.
  2. Step 2: In a medium bowl, combine the ricotta cheese, 1/4 cup of Parmesan cheese, and the chopped parsley. Season with salt and pepper.
  3. Step 3: Spread a thin layer of the meat sauce in the bottom of a 9×13 inch baking dish. Layer 3 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the crumbled turkey bacon and half of the cheddar cheese slices. Repeat layers: meat sauce, 3 lasagna noodles, remaining ricotta mixture, remaining turkey bacon, and remaining cheddar cheese slices. Top with the remaining Parmesan cheese.
  4. Step 4: Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the lasagna is heated through.
  5. Step 5: Let the lasagna stand for 10-15 minutes before slicing and serving.

Notes

  • Leftovers store beautifully in the fridge for up to 3 days, making this a great make-ahead meal.
  • Reheat individual portions in the microwave for 1-2 minutes, or bake larger portions in a 350°F oven until heated through.
