Instructions

  1. Step 1: Finely crush the Oreo cookies. You can use a food processor or place them in a resealable bag and crush them with a rolling pin.
  2. Step 2: In a large bowl, mix the crushed Oreo cookies with the softened cream cheese until well combined.
  3. Step 3: Roll the Oreo mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Chill in the freezer for about 15-20 minutes to firm up.
  4. Step 4: Melt the white chocolate wafers according to the package directions. Divide the melted chocolate into two bowls. Add green food coloring to one bowl and stir until you achieve your desired shade of green. Leave the other bowl white.
  5. Step 5: Dip each truffle into the green melted chocolate, tapping off any excess. Place back on the parchment-lined baking sheet. Immediately attach a candy eyeball to each truffle while the chocolate is still wet. Add a small dot of black food coloring near the eyeball to make the eye pop.
  6. Step 6: If desired, attach mini chocolate chips as decoration. Let the truffles chill in the refrigerator until the chocolate is set.
