Delicious one-pot creamy cajun chicken chicken sausage pasta recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound fully cooked chicken sausage, sliced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 pound pasta (penne, rotini, or similar)
  • 1/4 cup Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Step 1: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and chicken sausage and cook until browned and cooked through, about 5-7 minutes. Remove from the pot and set aside.
  2. Step 2: Add the onion and bell pepper to the pot and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more, until fragrant.
  3. Step 3: Stir in the diced tomatoes, chicken broth, pasta, and Cajun seasoning. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the pasta is cooked through.
  4. Step 4: Stir in the cooked chicken and chicken sausage, heavy cream, and Parmesan cheese. Heat through.
  5. Step 5: Garnish with fresh parsley and serve immediately.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop over medium-low heat, adding a splash of broth or water if needed to maintain creaminess.
  • Serve this comforting pasta with a simple side salad and crusty bread to soak up the delicious sauce.
  • Don't be afraid to adjust the Cajun seasoning to your preference; start with less and add more for extra heat!
