- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 pound fully cooked chicken sausage, sliced
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 4 cups chicken broth
- 1 pound pasta (penne, rotini, or similar)
- 1/4 cup Cajun seasoning
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Step 1: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and chicken sausage and cook until browned and cooked through, about 5-7 minutes. Remove from the pot and set aside.
- Step 2: Add the onion and bell pepper to the pot and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more, until fragrant.
- Step 3: Stir in the diced tomatoes, chicken broth, pasta, and Cajun seasoning. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the pasta is cooked through.
- Step 4: Stir in the cooked chicken and chicken sausage, heavy cream, and Parmesan cheese. Heat through.
- Step 5: Garnish with fresh parsley and serve immediately.
