Ingredients
Scale
- 1 cup rolled oats
- 1/2 cup peanut butter (or other nut butter)
- 1/2 cup shredded coconut
- 1/4 cup chocolate chips
- 1/4 cup mini marshmallows
- 1/4 cup honey or maple syrup
- 1/4 cup chopped pretzels
- 1 teaspoon vanilla extract
Instructions
- Step 1: In a large bowl, combine rolled oats, peanut butter, shredded coconut, chocolate chips, mini marshmallows, and pretzels.
- Step 2: Add honey or maple syrup and vanilla extract to the bowl.
- Step 3: Mix all ingredients thoroughly until well combined. The mixture should be sticky and hold its shape. If it's too dry, add a teaspoon of milk or water at a time until desired consistency is reached.
- Step 4: Roll the mixture into 1-inch balls.
- Step 5: Place the energy balls on a plate or baking sheet lined with parchment paper.
- Step 6: Refrigerate for at least 30 minutes to allow them to firm up before serving.
Notes
- Store these energy balls in an airtight container in the refrigerator for up to a week to maintain their freshness and prevent them from drying out.
- While these are no-bake, a quick 10-15 seconds in the microwave can warm them slightly if desired for a gooier texture, but be careful not to overheat.
- Serve these delightful energy balls as a pre-workout snack, a post-workout reward, or as a healthy and fun addition to your kids' lunchboxes.
- For extra intense chocolate flavor, use dark chocolate chips and melt a small amount separately before mixing to coat some of the oats.
