  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 15 ounces ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions. Drain and set aside.
  2. Step 2: Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add mushrooms and cook until tender, about 5-7 minutes. Stir in garlic, spinach, crushed tomatoes, tomato sauce, oregano, basil, and red pepper flakes (if using). Season with salt and pepper. Simmer for 15 minutes, stirring occasionally, until sauce has thickened slightly.
  3. Step 3: In a medium bowl, combine ricotta cheese, Parmesan cheese, egg, and parsley. Season with salt and pepper.
  4. Step 4: Spread a thin layer of the tomato sauce in the bottom of a 9×13 inch baking dish. Layer 3-4 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the mushroom and spinach sauce. Top with another layer of noodles, ricotta mixture, and remaining mushroom and spinach sauce. Finish with a final layer of noodles.
  5. Step 5: Sprinkle mozzarella cheese evenly over the top.
  6. Step 6: Cover the baking dish with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes, or until cheese is melted and bubbly and lasagna is heated through. Let stand for 10-15 minutes before serving.
