- 4 tablespoons butter
- 10 oz (about 40 large) marshmallows
- 1/2 teaspoon mint extract
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
- Green food coloring (optional)
Instructions
- Step 1: In a large microwave-safe bowl, melt the butter. Add the marshmallows and microwave in 30-second intervals, stirring in between, until completely melted and smooth.
- Step 2: Stir in the mint extract, salt, and a few drops of green food coloring (if using) until evenly combined.
- Step 3: Add the Rice Krispies cereal to the marshmallow mixture and gently fold until evenly coated.
- Step 4: In a separate microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
- Step 5: Pour the Rice Krispies mixture into a greased 9×13 inch pan. Gently press down to create an even layer.
- Step 6: Drizzle the melted chocolate over the Rice Krispies treats. Let cool completely before cutting into squares and serving.
Notes
- Store leftover treats in an airtight container at room temperature to maintain their chewy texture.
- A quick zap in the microwave (5-10 seconds) will soften slightly hardened treats, making them extra gooey.
- Serve these treats chilled for a refreshing minty bite, especially on a warm day!
- For easier spreading, grease your spatula or use a piece of parchment paper to gently press the Rice Krispies mixture into the pan.
