Delicious mint chip lasagna recipe recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 box (16 ounces) lasagna noodles
  • 1 (15 ounce) container ricotta cheese
  • 1/2 cup granulated sugar
  • 1/4 cup chopped fresh mint
  • 1 teaspoon vanilla extract
  • 1 (12 ounce) package semi-sweet chocolate chips
  • 2 cups heavy cream
  • 1/2 cup milk chocolate chips (optional, for garnish)

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions. Drain and set aside.
  2. Step 2: In a medium bowl, combine ricotta cheese, sugar, chopped mint, and vanilla extract. Mix well. Gently fold in the semi-sweet chocolate chips.
  3. Step 3: Spread a thin layer of the ricotta mixture in the bottom of a 9×13 inch baking dish. Layer with a third of the cooked lasagna noodles.
  4. Step 4: Spread half of the remaining ricotta mixture over the noodles. Repeat layers: noodles, ricotta mixture, noodles. Top with the remaining ricotta mixture.
  5. Step 5: Pour heavy cream evenly over the top layer. Sprinkle with milk chocolate chips (optional).
  6. Step 6: Bake for 30-35 minutes, or until heated through and bubbly. Let cool slightly before slicing and serving.

Notes

  • Store leftover lasagna in an airtight container in the refrigerator for up to 3 days.
  • Reheat individual portions in the microwave for 1-2 minutes, or bake the whole lasagna at 350°F for 15-20 minutes until warmed through.
  • Serve a scoop of vanilla ice cream alongside for the ultimate sweet and minty dessert experience.
  • For extra minty flavor, finely chop the mint and let it infuse in the ricotta mixture for at least 30 minutes before layering the lasagna.
