- 1 box (16 ounces) lasagna noodles
- 1 (15 ounce) container ricotta cheese
- 1/2 cup granulated sugar
- 1/4 cup chopped fresh mint
- 1 teaspoon vanilla extract
- 1 (12 ounce) package semi-sweet chocolate chips
- 2 cups heavy cream
- 1/2 cup milk chocolate chips (optional, for garnish)
Instructions
- Step 1: Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions. Drain and set aside.
- Step 2: In a medium bowl, combine ricotta cheese, sugar, chopped mint, and vanilla extract. Mix well. Gently fold in the semi-sweet chocolate chips.
- Step 3: Spread a thin layer of the ricotta mixture in the bottom of a 9×13 inch baking dish. Layer with a third of the cooked lasagna noodles.
- Step 4: Spread half of the remaining ricotta mixture over the noodles. Repeat layers: noodles, ricotta mixture, noodles. Top with the remaining ricotta mixture.
- Step 5: Pour heavy cream evenly over the top layer. Sprinkle with milk chocolate chips (optional).
- Step 6: Bake for 30-35 minutes, or until heated through and bubbly. Let cool slightly before slicing and serving.
Notes
- Store leftover lasagna in an airtight container in the refrigerator for up to 3 days.
- Reheat individual portions in the microwave for 1-2 minutes, or bake the whole lasagna at 350°F for 15-20 minutes until warmed through.
- Serve a scoop of vanilla ice cream alongside for the ultimate sweet and minty dessert experience.
- For extra minty flavor, finely chop the mint and let it infuse in the ricotta mixture for at least 30 minutes before layering the lasagna.
