Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breast, diced into 1-inch cubes
- 2 medium zucchini, sliced into half-moons
- 1 pint cherry or grape tomatoes
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Prepare the chicken by dicing it into 1-inch cubes, and slice the zucchini and tomatoes as instructed.
- Step 2: In a large mixing bowl, combine the diced chicken, sliced zucchini, cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and pepper. Toss the ingredients gently until the chicken and vegetables are evenly coated.
- Step 3: Transfer the entire mixture to a 9×13 inch baking dish or a large rimmed sheet pan, ensuring the ingredients are spread out in a relatively single, even layer for uniform cooking.
- Step 4: Bake for 20 minutes. After 20 minutes, carefully check the chicken to ensure it is nearly cooked through (internal temperature should be close to 160°F or 71°C).
- Step 5: Remove the dish from the oven, sprinkle the crumbled feta cheese evenly over the chicken and vegetables. Return the dish to the oven for an additional 5 minutes, or until the feta is lightly softened and the chicken is fully cooked (165°F or 74°C).
Notes
- Leftovers keep beautifully in the fridge for up to four days; for best texture, be sure to store them in an airtight container and drain off any liquid the zucchini releases overnight.
- When reheating, use the microwave on 50% power or heat gently in an oven covered with foil; this prevents the chicken from drying out and keeps the tomatoes from exploding.
- Turn this bake into a more substantial meal by serving it atop a bed of fluffy quinoa or brown rice, or alongside some crusty bread perfect for dipping into the pan juices.
- For the crispiest veggies and perfectly cooked chicken, ensure the mixture is spread in a true single, even layer in your pan; crowding the ingredients will steam them instead of baking them.
