- 1 cup sweet glutinous rice (sticky rice)
- 1 (13.5 oz) can full-fat coconut milk (divided)
- 1/2 cup granulated white sugar
- 1/2 teaspoon kosher salt (divided)
- 2 large, ripe yellow mangoes (such as Ataulfo or Honey mangoes)
- 1/2 teaspoon white sesame seeds (toasted, for garnish)
Instructions
- Step 1: Rinse the glutinous rice several times until the water runs mostly clear. Place the rice in a bowl and cover it with fresh water. Allow the rice to soak for a minimum of 3 hours, or preferably overnight. Drain the soaked rice well and steam it for 20-30 minutes until it is tender and translucent.
- Step 2: Prepare the sweet coconut sauce by combining 1 cup of the coconut milk, the granulated sugar, and 1/4 teaspoon of the kosher salt in a small saucepan. Heat the mixture over medium heat, stirring until the sugar is fully dissolved. Do not allow the mixture to boil.
- Step 3: Immediately transfer the hot steamed rice to a medium mixing bowl. Pour 3/4 cup of the warm sweet coconut sauce over the rice and stir gently to coat. Cover the bowl and let the rice stand for 30 minutes, allowing the rice to fully absorb the sauce.
- Step 4: Prepare the serving sauce (garnish sauce) by combining the remaining coconut milk (approx. 1/2 cup) and the remaining 1/4 teaspoon of salt in the same saucepan. Heat gently for 2-3 minutes. Set aside.
- Step 5: Peel and slice the ripe mangoes. To serve, scoop a portion of the sticky rice onto a plate, place the mango slices alongside, drizzle the reserved serving sauce over the rice, and sprinkle with toasted white sesame seeds.
Notes
- Store the prepared sticky rice and sauces in the refrigerator, but keep the mangoes separate and only slice them right before serving for optimal flavor and texture.
- If the sticky rice firms up after chilling, gently reheat it by steaming or microwaving with a small sprinkle of water or extra coconut sauce to maintain moisture.
- Maximize the sensory experience by serving the warm, freshly sauced rice immediately alongside cool (but not ice-cold) slices of ripe mango.
- When preparing the sweet coconut sauce, ensure the sugar is fully dissolved before removing it from the heat, and absolutely do not let the mixture boil, as this can cause the fat to separate.
