Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking dish.
- Step 2: In a large bowl, whisk together flour, sugar, baking powder, and salt. Add melted butter, milk, lemon zest, lemon juice, and vanilla extract. Stir until just combined; do not overmix.
- Step 3: Pour batter into the prepared baking dish.
- Step 4: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The cobbler will be golden brown on top.
- Step 5: Let cool slightly before serving. Enjoy warm!
