- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder

- 1 cup milk
- 1/2 cup (1 stick) unsalted butter, melted
- 1/4 cup lemon juice
- 1 teaspoon lemon zest
Instructions
- Step 1: Preheat oven to 350°F (175°C). In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- Step 2: Stir in milk and melted butter until just combined.
- Step 3: Pour batter into an ungreased 8×8 inch baking dish.
- Step 4: In a small bowl, combine lemon juice and lemon zest. Gently drizzle the lemon mixture evenly over the batter. Do not stir.
- Step 5: Bake for 45-50 minutes, or until golden brown and a toothpick inserted near the center comes out clean.
Notes
- Store leftover cobbler in the refrigerator, covered, for up to 3 days.
- For a warm, gooey treat, reheat individual portions in the microwave for 30-60 seconds.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream to complement the tartness.
- Don't overmix the batter; a few lumps are fine and will result in a more tender cobbler.
