- Sweet potatoes, 2 lbs
- Olive oil, 2 tablespoons
- Honey, 3 tablespoons
- Cinnamon, 1 teaspoon
- Salt, 1/2 teaspoon
- Black pepper, 1/4 teaspoon
- Garlic powder, 1/2 teaspoon
- Chopped pecans (optional), 1/4 cup
Instructions

- Step 2: Peel sweet potatoes and cut them into 1-inch cubes.
- Step 3: In a large bowl, toss the sweet potatoes with olive oil, honey, cinnamon, salt, pepper, and garlic powder until evenly coated.
- Step 4: Spread the sweet potatoes in a single layer on the prepared baking sheet.
- Step 5: Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
- Step 6: Remove from oven, sprinkle with chopped pecans (if using), and serve warm.
Notes
- Store leftover roasted sweet potatoes in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat in a skillet over medium heat until warmed through, rather than microwaving, to maintain their caramelized texture.
- Serve these sweet potatoes as a vibrant side dish alongside roasted chicken or pork for a balanced and flavorful meal.
- Don't overcrowd the baking sheet; use two if needed to ensure even roasting and prevent steaming.
