Ingredients
Scale
- 1 baguette, sliced into 1/2-inch thick rounds
- 1/4 cup olive oil
- 8 ounces ricotta cheese
- 2 tablespoons honey
- 1 teaspoon lemon zest
- 1/4 teaspoon ground cinnamon
- 2 ripe peaches, thinly sliced
- Fresh mint leaves, for garnish (optional)
- Pinch of salt
Instructions
- Step 1: Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and arrange them in a single layer on a baking sheet. Bake for 8-10 minutes, or until lightly golden and crisp.
- Step 2: While the crostini are baking, prepare the ricotta mixture. In a medium bowl, combine the ricotta cheese, honey, lemon zest, cinnamon, and a pinch of salt. Mix well until everything is thoroughly incorporated.
- Step 3: Once the crostini are cool enough to handle, spread a generous layer of the honey ricotta mixture onto each slice.
- Step 4: Arrange the thinly sliced peaches on top of the ricotta mixture. You can slightly overlap the peach slices for a more visually appealing presentation.
- Step 5: Garnish with fresh mint leaves, if desired. Serve immediately and enjoy!
Notes
- Store leftover crostini in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 3 days.
- For a warm, comforting treat, gently reheat the assembled crostini in a preheated oven at 300°F (150°C) for 5-7 minutes.
- Serve these elegant crostini as a delightful appetizer or a light dessert, paired with a glass of chilled Prosecco or a fruity white wine.
- To intensify the peach flavor, lightly grill or sauté the peach slices before layering them onto the ricotta mixture.
