Instructions

  1. Step 1: Preheat the oven to 400°F (200°C). On a large baking sheet, toss the cubed sweet potatoes with 1 tablespoon of the olive oil, kosher salt, and black pepper. Roast the potatoes for 15 minutes to give them a head start.
  2. Step 2: While the potatoes roast, prepare the glaze. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, the honey, soy sauce, and minced garlic until well combined.
  3. Step 3: Carefully remove the baking sheet from the oven. Add the sliced chicken sausage to the pan alongside the sweet potatoes. Drizzle about 3/4 of the prepared honey-garlic glaze evenly over both the potatoes and the sausage.
  4. Step 4: Return the pan to the oven and bake for an additional 12-15 minutes. The dish is ready when the sweet potatoes are fork-tender and the edges of the chicken sausage are lightly caramelized and sticky.
  5. Step 5: Remove the pan from the oven. Toss the ingredients gently to coat them thoroughly in the released pan sauce. Drizzle the remaining honey-garlic glaze over the dish just before serving.
