- 2 large sweet potatoes, peeled and cubed into 1-inch pieces
- 1 pound pre-cooked chicken sausage, sliced into 1/2-inch coins
- 2 tablespoons olive oil, divided
- 1/4 cup honey
- 2 tablespoons low sodium soy sauce
- 4 cloves garlic, finely minced
- 1 teaspoon kosher salt and 1/2 teaspoon black pepper
Instructions
- Step 1: Preheat the oven to 400°F (200°C). On a large baking sheet, toss the cubed sweet potatoes with 1 tablespoon of the olive oil, kosher salt, and black pepper. Roast the potatoes for 15 minutes to give them a head start.
- Step 2: While the potatoes roast, prepare the glaze. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, the honey, soy sauce, and minced garlic until well combined.
- Step 3: Carefully remove the baking sheet from the oven. Add the sliced chicken sausage to the pan alongside the sweet potatoes. Drizzle about 3/4 of the prepared honey-garlic glaze evenly over both the potatoes and the sausage.
- Step 4: Return the pan to the oven and bake for an additional 12-15 minutes. The dish is ready when the sweet potatoes are fork-tender and the edges of the chicken sausage are lightly caramelized and sticky.
- Step 5: Remove the pan from the oven. Toss the ingredients gently to coat them thoroughly in the released pan sauce. Drizzle the remaining honey-garlic glaze over the dish just before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days, keeping in mind the sweet potatoes will soften further once chilled.
- For the best texture, reheat individual portions in a toaster oven or standard oven at 350°F (175°C) until warmed through, as microwaving can make the glaze too sticky and the sausage tough.
- Balance the sweetness of the glaze by serving this dish over fluffy brown rice or alongside a simple mixed green salad dressed with a bright lemon vinaigrette.
- If you prefer a milder, roasted garlic flavor, briefly sauté the minced garlic in the olive oil for 30 seconds before incorporating it into the honey and soy sauce glaze mixture.
