Ingredients
- Chicken breasts: 2 lbs, cut into 1-inch pieces
- Chicken sausage: 1 lb, sliced
- Sweet potatoes: 2 large, peeled and cubed
- Honey: 1/4 cup
- Garlic: 6 cloves, minced
- Soy sauce: 2 tablespoons
- Olive oil: 2 tablespoons
- Red pepper flakes: 1/4 teaspoon (optional)
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
- Step 2: Bake the sweet potatoes for 20 minutes, then remove from oven and set aside.
- Step 3: While sweet potatoes are baking, in a large bowl, whisk together the honey, minced garlic, soy sauce, red pepper flakes (if using), and remaining 1 tablespoon of olive oil. Add the chicken pieces and sausage slices to the bowl and toss to coat evenly.
- Step 4: Add the coated chicken and sausage to the baking sheet with the partially cooked sweet potatoes, spreading everything into a single layer.
- Step 5: Return the baking sheet to the oven and bake for another 15-20 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
