Ingredients
Scale
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1/4 cup honey
- 1/4 cup milk (or more, as needed)
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup chopped peanuts (optional)
- Food coloring (various colors, optional)
Instructions
- Step 1: In a medium bowl, combine the peanut butter, powdered sugar, honey, and milk. Mix thoroughly until well combined and smooth. Add more milk, one tablespoon at a time, if needed to reach desired consistency. It should be thick enough to hold its shape but not too stiff.
- Step 2: Stir in the vanilla extract. If using food coloring, divide the mixture into separate bowls and add a few drops of your desired colors to each. Mix well until evenly colored.
- Step 3: If using, gently fold in the chopped peanuts to one or more of the peanut butter mixtures.
- Step 4: Melt the chocolate chips according to package directions (double boiler or microwave).
- Step 5: Shape the peanut butter mixture into small egg shapes (about 1-2 inches long). You can use your hands or a small spoon.
- Step 6: Dip the bottom of each peanut butter egg into the melted chocolate and place them on a parchment-lined baking sheet. Let the chocolate set completely before serving or storing. Add additional chocolate designs or sprinkles if desired.
Notes
- Store these peanut butter eggs in an airtight container in the refrigerator for up to a week to maintain freshness and prevent them from becoming too soft.
- For a warm, gooey center, gently microwave individual eggs for 5-10 seconds, being careful not to overheat.
- Serve these delightful treats nestled in a bed of shredded coconut or alongside a scoop of vanilla ice cream for an extra special Easter dessert.
- To prevent sticking, lightly grease your hands or spoon with cooking spray before shaping the peanut butter mixture into eggs.
