Ingredients
- All-purpose flour: 1 1/2 cups
- Peanut butter: 1 cup (creamy or chunky)
- Unsalted butter: 1/2 cup (softened)
- Brown sugar: 1/2 cup (packed)
- Granulated sugar: 1/4 cup
- Egg: 1 large
- Vanilla extract: 1 teaspoon
- Baking soda: 1/2 teaspoon
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a large bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
- Step 2: Beat in the egg and vanilla extract until well combined.
- Step 3: In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Step 4: Roll the dough into 1-inch balls and place them on an ungreased baking sheet. Flatten each ball slightly with a fork, making a crisscross pattern.
- Step 5: Bake for 8-10 minutes, or until the edges are lightly golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, enjoy!
Notes
- For the best flavor and texture, store these cookies in an airtight container at room temperature.
- A quick zap in the microwave (5-10 seconds) will make them extra gooey and delicious!
- Serve these with a cold glass of milk for the ultimate classic pairing.
- Don't overmix the dough after adding the flour – this keeps the cookies tender and prevents them from becoming tough.
