Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 (15 ounce) can refried beans
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onions
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Step 1: Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease. Stir in the taco seasoning and cook for 1 minute more.
  2. Step 2: Preheat oven to 375°F (190°C). Spread refried beans evenly over two large flour tortillas or large corn tortillas.
  3. Step 3: Top each tortilla with half of the seasoned ground beef, half of the Rotel, and half of the chopped onions.
  4. Step 4: Sprinkle each with half of the cheddar cheese and half of the Monterey Jack cheese.
  5. Step 5: Bake for 10-12 minutes, or until the cheese is melted and bubbly. Garnish with cilantro before serving (optional).

Notes

  • Leftovers are best stored in an airtight container in the refrigerator for up to 3 days.
  • For reheating, microwave individual servings for 1-2 minutes, or until heated through, adding a splash of water if needed to prevent dryness.
