- 1 lb ground beef
- 1 packet taco seasoning
- 1 (15 ounce) can refried beans
- 1 (10 ounce) can diced tomatoes and green chilies (Rotel)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup chopped onions
- 1/4 cup chopped cilantro (optional)
Instructions
- Step 1: Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease. Stir in the taco seasoning and cook for 1 minute more.
- Step 2: Preheat oven to 375°F (190°C). Spread refried beans evenly over two large flour tortillas or large corn tortillas.
- Step 3: Top each tortilla with half of the seasoned ground beef, half of the Rotel, and half of the chopped onions.
- Step 4: Sprinkle each with half of the cheddar cheese and half of the Monterey Jack cheese.
- Step 5: Bake for 10-12 minutes, or until the cheese is melted and bubbly. Garnish with cilantro before serving (optional).
Notes
- Leftovers are best stored in an airtight container in the refrigerator for up to 3 days.
- For reheating, microwave individual servings for 1-2 minutes, or until heated through, adding a splash of water if needed to prevent dryness.
- Serve with a side of your favorite Mexican rice and a dollop of sour cream for a complete and satisfying meal.
- To prevent a soggy bottom, pre-toast your tortillas lightly in a dry skillet before adding the toppings.
