Ingredients
- All-purpose flour: 1 1/2 cups
- Cold unsalted butter: 1/2 cup (1 stick), cubed
- Powdered sugar: 1/4 cup
- Salt: 1/4 teaspoon
- Vanilla extract: 1 teaspoon
- Fresh peaches: 4 medium, peeled and sliced
- Granulated sugar: 1/2 cup
- Cornstarch: 2 tablespoons
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease and flour an 8×8 inch baking pan.
- Step 2: In a medium bowl, whisk together the flour, powdered sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the vanilla extract.
- Step 3: Press half of the flour mixture into the prepared pan to form a crust. Bake for 15 minutes, or until lightly golden.
- Step 4: While the crust is baking, prepare the peach filling. In a separate bowl, combine the sliced peaches, granulated sugar, and cornstarch. Toss gently to coat the peaches.
- Step 5: Remove the crust from the oven and spread the peach filling evenly over the baked crust. Sprinkle the remaining flour mixture evenly over the peach filling.
- Step 6: Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly. Let cool completely before cutting into bars.
