Ingredients
Scale
- 4 cups brown rice crisps cereal
- 1/2 cup pecan pieces, chopped
- 1/4 cup pure maple syrup
- 1/4 cup unsalted butter or coconut oil
- 2 tablespoons almond butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Instructions
- Step 1: Lightly grease an 8×8 inch baking pan.
- Step 2: In a large saucepan, melt the butter or coconut oil over medium heat. Stir in the maple syrup and almond butter. Heat until smooth and well combined, about 1-2 minutes.
- Step 3: Remove the saucepan from the heat and stir in the vanilla extract and sea salt.
- Step 4: Add the brown rice crisps and pecan pieces to the saucepan. Gently fold the mixture until the cereal is evenly coated.
- Step 5: Transfer the mixture to the prepared baking pan and press down firmly and evenly with a spatula or your hands.
- Step 6: Let the krispy treats cool completely before cutting into squares and serving.
Notes
- To keep your treats chewy, store them in an airtight container at room temperature for up to 3 days.
- For a warm, gooey treat, microwave a square for just 5-10 seconds – watch it carefully!
- Serve these maple pecan treats with a scoop of vanilla ice cream for a truly decadent dessert.
- Gently toast the pecan pieces in a dry skillet before adding them for a deeper, nuttier flavor that complements the maple syrup.
