Ingredients
- Broccoli florets: 4 cups, finely chopped or pulsed in a food processor
- Cooked chicken breast: 2 cups, shredded
- Greek yogurt (plain, non-fat): 1 cup
- Reduced-fat cheddar cheese: 1 cup, shredded
- Onion: 1/2 cup, diced
- Garlic: 2 cloves, minced
- Almond milk: 1/4 cup
- Everything bagel seasoning: 1 tablespoon
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Step 2: Steam or blanch the chopped broccoli for about 5 minutes until slightly tender-crisp. Drain well, pressing out excess water.
- Step 3: In a large bowl, combine the cooked chicken, broccoli, Greek yogurt, cheddar cheese (reserve 1/4 cup for topping), diced onion, minced garlic, and almond milk. Mix well.
- Step 4: Transfer the mixture to the prepared baking dish and spread evenly.
- Step 5: Sprinkle the reserved cheddar cheese and Everything bagel seasoning over the top of the casserole.
- Step 6: Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly. Let cool for a few minutes before serving.

- Store leftover casserole in an airtight container in the refrigerator for up to 3 days.
