Ingredients

  • Chocolate Cake Mix: 1 box (plus ingredients called for on box)
  • Vanilla Frosting: 1 container (16 oz)
  • Red Gel Food Coloring: 1 tablespoon
  • Chocolate Sprinkles: 1/4 cup
  • Strawberry Jam: 2 tablespoons
  • Mini Marshmallows: 12
  • Slivered Almonds: 24
  • Powdered Sugar: 1 tablespoon

Instructions

  1. Step 1: Prepare the chocolate cake mix according to the package directions. Fill cupcake liners about 2/3 full and bake as directed. Let cool completely.
  2. Step 2: While cupcakes cool, prepare the "blood" frosting. In a bowl, mix vanilla frosting with red gel food coloring until desired "blood red" color is achieved.
  3. Step 3: Frost each cooled cupcake with the red frosting. Dip the frosted cupcakes in chocolate sprinkles.
  4. Step 4: Make the "vampire bites." Cut each mini marshmallow in half. Attach two slivered almonds to the cut side of each marshmallow half to create "fangs."
  5. Step 5: Create the "bite mark." Use a small spoon or toothpick to create a small well in the center of each cupcake. Fill each well with approximately 1/4 teaspoon of strawberry jam.
  6. Step 6: Place the marshmallow "fangs" on top of the strawberry jam to look like bite marks. Dust with powdered sugar to give it a spooky look.

Notes

  • Store unfrosted cupcakes in an airtight container at room temperature for up to 2 days, then frost just before serving.
  • If the frosting gets too soft, chill the cupcakes for a few minutes to firm it up before adding the jam and fangs.
